Aunt Felicia’s Holiday Squash Souffle

When we host Thanksgiving each year, the most frequently asked question we get is “Are you making Aunt Felicia’s squash souffle?” It’s the signature dish on the table, and is by far the most popular. When you think squash, you don’t typically think “decadent” but this dish is all that and then some.

COOK TIME: 1 Hour

Ingredients

  • 2 packages frozen yellow squash (defrosted)
  • 1 pint coffee rich (= 2 cups)
  • 2 eggs
  • 1 stick melted margarine
  • 1/2 cup sugar
  • 1/2 cup flour
  • Salt
  • Cinnamon

Steps

  1. Preheat oven to 350.
  2. In a bowl, mix defrosted squash with melted margarine.
  3. In a separate bowl, mix all dry ingredients, then add to squash.
  4. Beat together eggs and coffee rich, then add to squash mixture.
  5. Pour into greased casserole dish.
  6. Bake for 1 hour or until firm.
