Ingredients
- 2 packages frozen yellow squash (defrosted)
- 1 pint coffee rich (= 2 cups)
- 2 eggs
- 1 stick melted margarine
- 1/2 cup sugar
- 1/2 cup flour
- Salt
- Cinnamon
Steps
- Preheat oven to 350.
- In a bowl, mix defrosted squash with melted margarine.
- In a separate bowl, mix all dry ingredients, then add to squash.
- Beat together eggs and coffee rich, then add to squash mixture.
- Pour into greased casserole dish.
- Bake for 1 hour or until firm.
