Classic Spinach Dip

This is about as simple as it gets for holiday recipes, but it has always been one of my favorites! Growing up, my family’s Christmas Eve plans didn’t look the same every year – sometimes we’d be at an aunt’s house, at grandma’s, or hosting at home, but no matter where we ended up, my mom would always make this spinach dip. Over the years, I’ve taken on the responsibility of making the spinach dip, and even though we only get to enjoy it around Christmas, it never disappoints!

Ingredients

  • 1 box (10 oz) frozen chopped cooked spinach
  • 1 container (16 oz) sour cream
  • 1 cup of mayonnaise
  • 1 package of Knorr Vegetable recipe mix
  • 1 can (8 oz) water chestnuts, drained and chopped
  • 3 green onions, chopped
  • 1 fresh baked pumpernickel bread loaf

Steps

  1. Thaw your frozen chopped cooked spinach. Once thawed, squeeze dry to drain of any excess water.
  2. Drain and chop water chestnuts.
  3. Chop green onions.
  4. Combine these and all other ingredients in a bowl and mix
  5. Chill for about 2 hours.
  6. While mixture is chilling, cut the top off the fresh baked pumpernickel loaf and carve out the insides, so you can use the loaf like a bowl.
  7. Chop up the bread carvings to use for dipping.
  8. When the mixture is nice and chilled and ready to serve, scoop into the bread bowl and serve with the extra bread! (Also goes nicely with crackers or pita chips)
