Shaun Mackiel’s Broccoli Rabe/Rapini

Probably my brother’s most favorite dish is sauteed broccoli rabe. Anyone who knows me knows I love broccoli rabe.. but my brother makes the version I ♥️ the most. He literally makes me a tray every time I see him. Follow this recipe for tender seasoned rabe! I will always think of him whenever I order it or make it.

Ingredients

  • 1 head of the freshest, greenest broccoli rabe OR rapini you can find.
  • 4-6 garlic cloves, sliced on the thicker side
  • ¾ cup of extra virgin olive oil
  • Onion salt
  • Granulated garlic

Steps

  1. Important: remove about your pinky’s length of the stem end of your broccoli rabe/rapini, the ends are typically too stringy / tough to eat even after steaming/cooking.
  2. Cut remaining broccoli rabe/rapini about ½ fingers length in size, separate the stems from the heads/leaves.
  3. In your largest non-stick saucepan or pot, drizzle in a little bit of olive oil (2-3 tbsp) on a medium-high heat.
  4. As soon as olive oil starts to smoke, add garlic slices stirring & flipping frequently until golden brown, remove garlic and set aside.
  5. Quickly add stems & remaining olive oil, sprinkle onion salt/granulated garlic lightly.
  6. Sautee stems for about 2 minutes.
  7. Add remaining broccoli rabe/rapini, sprinkle in slightly more onion salt/granulated garlic, and stir additional 1-2 mins until everything is evenly coated with olive oil.
  8. Reduce heat to medium, steam with lid on for approximately 3-4 more minutes.
  9. Serve broccoli rabe/rapini in favorite dish & sprinkle roasted garlic slices on top.
