Uncle Pete’s Buffalo Chicken Dip

Uncle Pete would make this dish for every family gathering. In 8th grade, I filmed myself preparing it for my final project in a ‘moving image’ class (published to YouTube under SUHOOPS19). 12 years later, the video has 12K views and has become as much of a hit as the dip itself! https://youtu.be/8gcqBq_yv20

Ingredients

  • One rotisserie chicken (shredded), or four chicken breasts (seasoned, baked and cubed)
  • Two blocks of cream cheese
  • One cup of Frank’s Red Hot sauce
  • Once cup of blue cheese dressing
  • 1.5 cups of shredded cheddar cheese
  • Tostitos Scoops, for dipping

Steps

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, whisk cream cheese, hot sauce and blue cheese dressing until consistency is smooth.
  3. Fold in half of your cheddar cheese, spread in a casserole dish and sprinkle the remaining cheese on top.
  4. Bake for about 30 minutes until warm and bubbly.
  5. Serve with Tostitos Scoops.
